For over 13 years, Kevin Slemmons has honed his craft, dedicating himself to the delicate precision of authentic Japanese sushi. His journey began with two years of intense training in Colorado, but his reputation was solidified as lead sushi chef at Santa Barbara’s famed Arigato, a restaurant known for setting the bar in sushi excellence. During the pandemic, Kevin pivoted to high-end private omakase dinners, serving elite clientele with sushi that rivals the best in the world. Now, he brings this unmatched expertise and passion to Old State Saloon, where each dish reflects years of dedication, technique, and an unwavering respect for the purity of the ingredients.
Rob Greenquist’s journey into sushi started at 16, when he spent a summer in Japan and became fascinated by the uncompromising discipline and precision of sushi chefs. While his career took him into the world of tech—where he spent two decades solving complex challenges in digital forensics—his passion for sushi never faded. Rob spent years seeking out the finest sushi experiences worldwide, developing a deep appreciation for what separates good sushi from truly world-class sushi. His partnership with Kevin is built on a shared obsession: delivering the highest level of quality, technique, and authenticity to every guest.
